For best results, roll cookie dough to 1/4″ thick directly on baking parchment, then cover with plastic wrap and chill in freezer for a few minutes until cold, but not frozen. Remove from freezer and leave plastic wrap on top of dough while quickly cutting with cookie cutters (plastic wrap prevents dough from sticking to cutter and promotes definition). Carefully remove plastic wrap and place cut dough on cookie sheet lined with parchment paper. Place cookie sheet in freezer (this will help prevent cookie dough from expanding and erasing cookie cutter details). Preheat oven to temperature listed in recipe. When ready to bake, remove cut cookie dough from freezer. Place on room-temperature cookie sheet lined with parchment paper. Bake according to recipe. Hand-wash. Air-dry. Machine-wash cold with like colors. Non-chlorine bleach only. Tumble-dry low. These classic vanilla sugar cookies can be decorated in all sorts of fun ways – the only limit is your imagination! (1 stick) softened unsalted butter 1 1/2 cups sifted confectioners’ sugar 2 tsp. vanilla extract 2–4 drops food coloring In a mixing bowl, using an electric mixer, beat the butter, confectioners’ sugar and vanilla on medium speed until smooth and blended. Stir in 1 drop of food coloring at a time until the desired shade is reached. To decorate the cookies, spread the frosting over the top of a cookie and decorate with the sugars and icing pens. To make cookie sandwiches, choose 2 identically shaped cookies and spread 1 to 2 Tbs. frosting evenly over one of the cookies. Center the other cookie on the frosted one and gently press together. Decorate the top cookie with frosting, sugars and icing pens.
